DESCRIPTION

It is with great pleasure to welcome you to the 4th FLAVOURSOME Workshop. This two-day event is being held at the facilities of CIAL, located on the prestigious Campus of Excellence of the Autonomous University of Madrid (UAM), Spain.

The meeting will feature talks by leading experts, and the program is structured into four thematic blocks:

  • Flavour Chemistry and Sensomics-Based Approaches
  • Food Oral Processing and Flavour Perception
  • Physiology of Flavour and Multisensory Perception
  • Designing Novel Foods: How Flavour Impacts Consumer Response


These topics align with the thematic focus of the various FLAVOURSOME working groups. In addition to keynote lectures and short talks, the program includes World Café discussions and round tables, ensuring a dynamic and engaging exchange of ideas.

This workshop will bring together researchers, industry experts, and stakeholders from FLAVOURsome COST Action and EU-funded project FlavourFerm to explore the science, innovation, and future of flavour fermentation.
Aim: Get knowledge and first-hand experience in the physiology, pathophysiology, brain integration and language of the chemoreception.
On 15th May 2025, a special satellite meeting will be organized after the 7th International Food Processing Conference (12-14th May, 2025, Valencia, Spain).
The 1st FLAVOURsome Advanced Training School was the first event organized by our COST Action and it was a success! This Training School was locally organized by Maarten Jongsma at Wageningen University and Research in the Netherlands and focused on the novel technology “Tongue-on-chip 2.0: Taste Receptors and Other Oral Components Involved in Flavour Perception”.
The primary objective of the 1st FLAVOURsome Workshop is to facilitate a robust dialogue between researchers and industry professionals, aiming to establish effective collaborations that drive innovation in the field of plant-based food flavours.
